Wash and dry all produce. In a #small pot{}, bring @Israeli couscous{10%oz}, @veggie stock concentrate{6%unit}, and @water{1½%cup} (3 cups for 4) to a boil. Once boiling, cover and reduce to a low simmer. TIP: Start with hot water to help the water boil faster. Cook until tender, ~{6%minutes} to ~{8%minutes}. Keep covered until ready to serve.

Meanwhile, halve @falafel{20%unit}. Drizzle @cooking oil{1%tsp} in a hot #pan{} and cook until golden and crispy, ~{2%minutes} to ~{3%minutes} per side.

While falafel cooks, in a #bowl{}, mix @smoky garlic herb sauce{2%oz} and @sour cream{3%tbsp}. Dice @mini cucumber{2%unit}. Halve @grape tomatoes{8%oz}. Roughly chop @dill{½%oz}. Quarter @lemon{2%unit}. In a separate #bowl{}, mix cucumber, tomatoes, dill, @feta cheese{1%cup}, 1 TBSP @olive oil{2%tbsp} (2 TBSP for 4), and juice from half the lemon. Taste and season with @salt{} and @pepper{}.

Toast @pita bread{4%unit}; spread with half the @garlic herb butter{4%tbsp}. Cut into quarters. Fluff couscous; stir in @pistachios{1%oz} and remaining garlic herb butter. Divide couscous between plates; serve with falafel, pitas, cucumber salad, and remaining lemon wedges. Drizzle falafel with garlic herb crema and as much @hot sauce{4%tsp} as you like.
